This study evaluated the proximate composition, and content of phenolic flavonoid compounds as well potential antioxidant property saba (Musa acuminata x balbisiana Colla) banana blossoms. The blossom was dried at 60 ℃ for 12 hours. sample then extracted using 80% ethanol. ethanolic extract subjected to various characterization, including following: i) nutritional values powder, which analyzed according Association Official Analytical Chemists (AOAC), ii) total phenol iii) test using, 2-diphenyl-1picrylhydrazyl (DPPH) free radical scavenging activity. results revealed that contains a high amount ash, fiber, protein, carbohydrate low fat. Total Phenolic Content Flavonoid Concentration an abundant reservoir compounds, concentration 500 mcg/mL, exhibited highest activity extract, suggesting dose-dependent Further investigation other in vitro vivo assay is recommended confirm use antioxidant.
